Aji Amarillo Chicken - A Peruvian highlight

Dear friends, I would like to share with you a special recipe that uses the rare and delicious Aji Amarillo Chili.

The result is an incredibly delicious chicken dish that will take you on a culinary journey to Peru!


  • 4 chicken breast fillets
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, chopped
  • 2 Aji Amarillo chillies, seeded and chopped
  • 240 ml chicken broth
  • 200 ml condensed milk
  • juice of 1 lime


  1. Season the chicken breast fillets with salt and pepper and fry them on both sides in olive oil in a pan. Take them out of the pan and set them aside.
  2. Use the same skillet to sauté onions, garlic, and aji amarillo chilies until onions are translucent.
  3. Add the chicken broth and let everything come to a boil. Then reduce the heat and let it simmer for 15 minutes.
  4. Add the condensed milk and lime juice and blend with an immersion blender until the sauce is smooth.
  1. Put the chicken breast fillets back into the sauce and simmer for another 5 minutes. Serve it with rice or potatoes and enjoy this delicious dish!
