Aji Amarillo Chicken - A Peruvian highlight

Dear friends, I would like to share with you a special recipe that uses the rare and delicious Aji Amarillo Chili.
The result is an incredibly delicious chicken dish that will take you on a culinary journey to Peru!
Ingredients:
- 4 chicken breast fillets
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, chopped
- 2 Aji Amarillo chillies, seeded and chopped
- 240 ml chicken broth
- 200 ml condensed milk
- juice of 1 lime
Preparation:
- Season the chicken breast fillets with salt and pepper and fry them on both sides in olive oil in a pan. Take them out of the pan and set them aside.
- Use the same skillet to sauté onions, garlic, and aji amarillo chilies until onions are translucent.
- Add the chicken broth and let everything come to a boil. Then reduce the heat and let it simmer for 15 minutes.
- Add the condensed milk and lime juice and blend with an immersion blender until the sauce is smooth.
- Put the chicken breast fillets back into the sauce and simmer for another 5 minutes. Serve it with rice or potatoes and enjoy this delicious dish!
