2 Habanero Caribbean Red chillies, seeded and chopped
3 tbsp olive oil
Juice of 2 limes
3 garlic cloves, chopped
1 tbsp brown sugar
salt and pepper
Preparation:
In a bowl, combine the olive oil, lime juice, chopped garlic, brown sugar, and chopped chillies. Season with salt and pepper.
Add the chicken breast fillets to the marinade and leave to marinate in the fridge for at least 2 hours (or overnight).
Place the chicken on the grill and grill over medium-high heat, until cooked through, about 6-7 minutes per side. Serve the dish with a fresh salad or grilled vegetables.
