The Aji Amarillo chili is a yellow chili variety that plays an important role in Peruvian cuisine. The plant is a Capsicum baccatum, native to South America. Under good conditions it reaches a height of 1.5 to 2 meters. The fruits are around 5 -10 cm long. They ripen from green to a strong yellow-orange and have a medium spiciness between 60,000 and 90,000 Scoville units.

The Aji Amarillo chili has a sweet, fruity taste and a pleasant spiciness. It is one of the most important ingredients in Peruvian cuisine and is used in sauces and soups that appear in many Peruvian dishes, including the famous Peruvian fish dish Ceviche. The chilies can be used fresh or dried and are perfect for salsas, dips and marinades. In Peru, the Aji Amarillo chili is also traditionally used in the national dish “Aji de Gallina”.
